I love quick and easy recipes like these last minute no bake cupid cookies but who can not love adorable cakes?
I’ve always wanted to be able to say that I decorated all of my kids birthday party cakes? Especially now that my son is gluten free.
The problem with decorating all of our own cakes is time. There’s never enough of it, that’s one of the reasons this bunny fun Easter themed cake feels a win-win. It comes from a boxed cake mix, we used the Pillsbury Gluten Free Funfetti Mix since this is such a fun loving cake. The icing is just a pre-made can of whipped buttercream that we dyed green using McCormick Food Coloring. Even though all of the ingredients to make this cake are pre-measured and ready to go, it still feels like something to brag about.
You’ll notice my decorating skills are lacking with this cake. That’s for a few reasons. A) I am not a cake decorator. B) I didn’t have the proper tips. You are supposed to use a Wilton tip 233 for grass, we’ll I used a Ziploc bag. It was far too time consuming that way though, next time just invest in a nice set like this one. I have come to love the easy exchange coupler that lets you switch out tips in the middle of icing without having to use a new bag.
Then finally reason C) for the cake decorating skills on this, or rather lack of, is the fact I wanted it to be fun, something kids would love. That’s one of the reasons I decided to use a Funfetti mix, so that it would feel like an Easter egg hunt.
Once the cake had been iced, two bunny peeps were placed on top, along with some of these great tasting chocolate eggs from Hershey. They are gluten free and make a wonderful alternative to the non gluten free Robin’s eggs by Whopper.
At the end of the day, Easter is not about bunny rabbits or Easter eggs, it’s about the blood that was shed by a Christ so overwhelmingly in love with you and I. Easter is about love, salvation, grief, redemption, and victory. It’s about the joy that can come from knowing that the Lord Jesus Christ rose on the third day. The bunny rabbits and Easter eggs are cute, obviously I love them. I adore how they remind us that the seasons are changing and that the garden bed is opening up but let’s make sure to spend some time overwhelmingly in love with our Savior and as you and your kids are preparing this cake together, be sure to let them know just how much it is that Jesus Christ loves them.
