Have you ever made a horrible mistake?
I have. When I made this mistake I had no idea that it would actually turn out to be the best thing ever. Kinda like that kids book I read to my son by Richard Scarry. In the book the little cat was supposed to go grocery shopping for his mom, but he forgot the list at home and bought the items he thought was best. Turns out he thought junk food would be the best thing to buy and the momma cat was very mad until some unexpected company came over. The momma cat was able to serve the junk food for her guest and told them she was having a party just for them.
Well, when it felt like a party for my children and I when I made the mistake of cake pops gone bad. You see, I bought a cake pop pan some few years back, when cake pops were all the rage. Well, I was never any good at making cake pops but I had to talk my husband into the fact that I needed the pan, so of course the last thing I was gonna do was get rid of it just because I couldn’t manage to make a good cake pop.
Then, a few weeks ago I got brave and thought I would try making them again. So, when they failed again you can imagine I was upset and so I tried one more time with a cake mix that I had on hand. The cakes turned out beautiful, perfectly round. So, when the first one fell straight down the stick you can imagine that I was mad. By this point I had gone through too much cake mix so I decided to pull out a can of buttercream frosting, I popped it into the microwave to loosen it up. Only, I forgot about it and it was in there a little too long, now I had a liquid.
Christmas Cake Bites
Since I’m stubborn and hardheaded I decided to improvise. I lined the round little cake bites onto a baking sheet and topped them with the melted buttercream. no dipping. no hoping the sticks won’t fall. no frustrating anger when the cakes won’t stand up. just cake bites. Since we are in the Christmas season I decided that they should be Christmas cake bites instead of cake pops and sprinkled festive sprinkles all over them.
Let me tell you what, these were the most amazing things that I have put in my mouth in a very long time. Complete and total perfection. I dare you to try them.
- 1 Box Cake Mix (plus ingredients)
- 1 Can Buttercream Frosting
- Red and Green Sprinkles
- Mix the cake mix together according to instructions. Do not add extra oil.
- Pour the cake batter into a cake pop pan and cook until inserted tooth pick comes out clean.
- Melt buttercream frosting in microwave
- Drizzle buttercream over cooled cake bites.
- Add sprinkles
- Allow frosting to cool down before serving.
