Nothing seems to go together the same way that chocolate and peanut butter go together. The combination is by far my favorite! I didn’t think much about making these chocolate chip peanut butter cookies until I gave one to my bestie who had never seen chocolate chip peanut butter cookies before in her whole life. Peanut butter cookies are something that happens semi-often here. If you’re like me then you’re not much of a baker. Let’s get real, who has the time? Frankly, even if I had the time I just don’t seem to have the talent.
Still, peanut butter cookies are a quick thing to put together. They don’t take much more effort than scooping out cookie dough from a giant container. Plus there’s something about homemade cookies that makes me feel a little bit more like Suzie Homemaker and I’m totally okay with that, that feeling doesn’t happen often. Plus since these cookies are peanut butter they are loaded with protein and it makes for a great afternoon snack while my son does his homework. Every time I make them the kids look like they are being spoiled rotten, it’s that look of “mom you are awesome!” and even “wow you totally love me”. Okay, maybe not. They could probably care less about the mushy thoughts but a woman can pretend. In reality, my kids are probably thinking “food!!!!!”.
Anytime I eat chocolate chip peanut butter cookies, whether mine or someone else’s I always think of my grandmother. Growing up, every time we went to her house she had a cookie combination of chocolate and peanut butter cooking in the oven. I’m pretty sure this is her exact recipe since we would often help her. That’s another bonus to this recipe – it’s easy enough for kids to help with! Both of my grandmothers were good about allowing us to join in with them in the kitchen and I try to extend that same invitation to my own kids. My kids are only 4 and 5 so that invitation doesn’t get them much access yet but cookies are definitely something they are allowed to help with. I’ll even let them help me bake chicken parmesan on occasion, they absolutely love that!
An easy way to remember the peanut butter cookie recipe is that it’s even measurements. 1 cup of sugar, 1 cup of peanut butter and 1 egg. That’s it! See how easy that is? If you have three kids then each kid could have a part in making the cookies. It’s the perfect recipe for little ones to feel that they have a big role in the house.
Baking with kids is something that is very near to my heart. I mentioned that my grandmothers would bake with us but it was always as simple as mac and cheese or peanut butter cookies, my knowledge in the kitchen didn’t extend much farther than that. My mother, on the other hand, would always say “out of the kitchen while I’m cooking.” This is something I can share, it’s something that she’s aware of, it’s something that I’m guilty of from time to time. The thing is, as moms we want to protect our kids and that means protecting them from getting burnt while in the kitchen. Just last week I burnt my hand on the inside of the stove and my hand still hurts, naturally, that’s not a hurt I want my children to experience.
However, when I was 14 my family lived in Central America and my mother become deathly sick. She ended up moving back to the United States while my dad stayed in Central America with us. It didn’t take long at all before we realized none of us knew how to cook. God bless my dad, he tried but his food was awful. To this day he is still like a fish out of water in the kitchen and it just tickles my heart because I think back to the day of him trying to make the food “fun” by trying new combinations and even shapes of food.
When my mother returned back to Belize one of the very first things she did was teach me how to cook and those memories that we made together are very dear to my heart. However, it was six months before my mom was healthy enough to move back home with us. That life lesson taught me that it’s important to teach my children how to cook. So despite the fact that they are still young, they do help out in the kitchen and this recipe is just perfect for them.
I mentioned that our basic peanut butter cookie recipe is a simple one to one measurement. We only add 1/2 cup of chocolate chips to this to make it a chocolate chip cookie recipe. Not very many chocolate chips end up in each cookie. I would say it’s safe to go up to 3/4 cups of chocolate chips but the cookies may not cook evenly if you go all the way up to an even cup of chocolate chips.
- 1 Cup Peanut Butter
- 1 Cup Sugar
- 1 Egg
- 1/2 Cup Chocolate Chips
- Preheat oven to 350 degrees.
- Combine all ingredients together.
- Roll cookie dough into small balls and place onto greased cookie sheet.
- Flatten cookies with a fork.
- Bake for 8 minutes or until golden.
