Gluten Free Blueberry Bread For Busy Moms
There are not many breads that are good gluten free. There are certainly not many breads that taste as good as this delicious, easy gluten free blueberry bread. The secret to it’s deliciousness?
Just how easy it is.
Since going gluten free I have learned to go without bread products. I’m okay with that. As it turns out, those sort of foods leave me feeling drained and a bit sluggish, not what this busy mom needs.
However, my three year old son is also gluten free.
His metabolism is fast and removing gluten from his diet was like removing the filler. Go figure. It didn’t take long for him to begin saying he was always hungry or asking for more. Two bowls of cereal every morning at the age of three is not cool. And it wouldn’t stop there. He would be hungry before lunch and then after lunch and at every meal he was asking for seconds.
Obviously we tried increasing his protein and we also tried offering more snacks to him, but at some point those high dollar gluten free snacks add up in cost. They can get very expensive, very fast.
Then there are days where all he ask for is a peanut butter and jelly sandwich, to any regular diet family that is no big deal. To me, that is a very big deal.
And so we go back to the topic of the gluten free bread. It was eleven o’clock and my boy wanted a peanut butter and jelly sandwich. I didn’t really have the time to get nifty in the kitchen with fancy flours. He had just seen me buy a loaf of bread at the store, for him. He knew his mommy promised him a gluten free peanut butter and jelly sandwich but when I opened the bag and pulled out the first slice it turned to crumbs in my hand. Typical.
So, I did the next best thing I could think of. I grabbed my loaf pan and pulled out Martha White Gluten Free Blueberry Muffin Mix. Just add milk. I knew I could now offer him a sandwich.
While I admit this is not the best bread for peanut butter and jelly sandwiches or any sandwich for that matter it was actually a very enjoyable piece of bread. It held up well to jelly and jams. It plays nice with butter and it is pretty enough to sit at the dinner table with the big people food. I did not get a chance to try it in the toaster but that is another story for another time. Cross Contamination.
Seriously though, this Gluten Free Blueberry Bread is great for busy moms on the go! Just pop it in the oven the night before you need it and since it comes from an already made mix there is no worry about whether or not it will be difficult. Oh, and the family will love it!
- 1 1/3 cup milk
- 2 pks of Martha White Gluten Free Blueberry Muffin Mix
- Preheat the oven as directed on label of muffin mix.
- Combine muffin mix with milk as package describes.
- Bake in a loaf pan for 50 minutes or until an inserted toothpick comes out clean.
