Lemon Herb Chicken
First of, I have to let you know that it took way longer to get this post up than I expected. My week was crazy last week and my toddlers were crazy last week and then I was moody and frankly, I didn’t sit down at the computer after the last post that I wrote. Sad huh? But! The recipe that I promised you is finally here!
Do you know what I love most about this recipe, apart from the fantastic flavor?
It takes less than roughly 30 minutes to get dinner on the table!
Yes, that’s right. This is a weeknight favorite!
How To Make Lemon Herb Chicken
So, the first thing you will need to do is preheat your oven and butter your dish. Set the oven temp to 450.
Next you will need to butter your dish using 1 tablespoon of butter. You can do this by melting the butter in the oven or microwave. Typically, I toss the pan in the oven while it preheats and let the butter melt that way. This allows me to clean and cut my chicken if needed. Or, you can do what I did this time around and buy precut chicken strips. So easy!
Once your oven is preheated and your pan has been nice and buttered, layer the chicken along the bottom of the pan. Slice up 1-2 lemons medium sized lemons and tuck them between the chicken strips so that you get flavor on both top and bottom. Cut up a 2-3 garlic cloves and do the same thing for those.
May I stop right here for a minute and talk to you about rosemary? Do you see this tall and gorgeous plant growing on my front porch? That is rosemary. At the beginning of the summer it was a tiny little thing. I bought it in the produce section of my grocery store as a live plant for $1.98. It was so small back then and now look at it! I most certainly got my money’s worth.
Wash 1-2 rosemary sprigs off and then slide your hand down the stick piece. This will cause all of the leaves to fall off. Sprinkle those on your dish. and viola! You can totally call this quitting time. Or, if you would like your dish to have a little bit more color to it add some of your favorite McCormick chicken seasoning. My personal favorite is the rotisserie chicken seasoning that they have.
May I stop again? I am so sorry ya’ll! I am horrible at posting recipes, a reader brought to my attention last week that I am not someone who give exact measurements. This is a lot of the reason that I don’t post more recipes. Only, I don’t want to let my fear of not being good enough hold me back either. I do know it can be aggravating for you. It’s aggravating to me that I’m not better at this.

There’s not much more left to the recipe at this point. Just pop in it in the oven at 450 for 20 minutes. Your chicken should be nice and juicy when it comes out. Yum!
